This unique system protects our cacao beans from:
• Harmful UV rays
• Mold and excess moisture
• Pests like mice, cockroaches, and ants
After every two-week drying cycle, we perform a deep, meticulous cleaning.
Then the dryer rests — waiting for the next batch of freshly fermented cacao.
Thanks to this gentle and controlled sun-drying process, there’s no need to roast the beans.
They retain their full spectrum of trace minerals, as well as the signature flavor profile developed during fermentation.
