The birth of the chocolate brand Nikola Kalida began in 2011. Living in harmony with nature sent the founder Nikola to the mountains of the Dominican Republic. Together with like-minded people, he began to plant cocoa trees of special subspecies of the Trinitario variety.
During this time, our team has planted and grown more than 160,000 trees, including 70,000 cocoa trees.
In 2015, young cocoa began to delight with the first fruits. We built a chocolate laboratory and started experimenting and testing with cocoa beans and chocolate.
The main part of the world's chocolate is made from cocoa beans that have been deep roasted for 25 minutes at a temperature not lower than 120 degrees Celsius. Most of the important micronutrients in cocoa beans are destroyed during the roasting process. And we do it differently! The cocoa tree is truly mystical and its fruits contain a storehouse of useful and essential trace elements that can slow down the aging of cells, charging them with vital energy.
That is why our goal was to develop a way to make chocolate from cocoa beans without roasting.
Perfectionist Katerin Boro, and today the company's chief chocolatier, has been researching and searching for a method and recipe for making live chocolate. During 4 years of practical testing, we have gained vast experience in cocoa and chocolate production. The recipe has been found! So many details into making living chocolate... Nikola Kalida's cocoa processing plant and chocolate factory have been built and are located in the same mountains on plantations. Complete environmental friendliness and waste-free production. Chocolate machines work using solar energy. Our company plans to scale up production, however, the production volumes of our chocolate will always remain limited in order to maintain the absolute quality of the products.
